Happy Thursday! We had a busy and productive morning:) Painted with the color RED, then they wanted to do dobbers so we did them and ended up making some necklaces out of beads since we just had girls at the table this morning:)
They are getting so good at the alphabet, we've been practicing with a few alphabet games. It's amazing to see the difference between this year and last.
Since all the picky eaters are back in school, we tried this 10 Minute Chicken Stir Fry for lunch. They all seemed to love it, especially the broccoli. Maybe next week we will have to try beef and broccoli!
10 Minute Chicken Stir Fry
1 c. chicken broth
3 T soy sauce
2 T cornstarch
1 tsp ground ginger (I didn't have any)
2 T oil
3 cloves garlic, minced
3/4 lb chicken breast
5 c fresh frozen cut-up vegetables, such as peppers, onions and broccoli (I used a bag of California blend veggies)
In small bowl, combine broth, soy sauce, cornstarch, and ginger, and set aside. In a large skillet or wok, heat oil and garlic, on medium heat. add chicken, stirring quickly and frequently. Cook 2 minutes. add vegetables and stir-fry for 3 minutes. Stir broth mixture and pour into skillet, stirring constantly. Bring to a boil for one minute. Serve with rice- makes 4 servings.
Breakfast: cereal, banana
Lunch: chicken stir fry, oranges, grapes
